As Sous Chef, you will use your refined palate to create unforgettable Japanese culinary experiences that tell a story, whilst ensuring quality, safety, maintaining exceptional standards and keeping the kitchen running seamlessly. In this particular role, we are seeking someone with extensive experience in Japanese inspired Cuisine and sushi making to bring one of our venues to life.
Your day to day
A little taste of your day-to-day
Every day is different, but you’ll mostly be:
· Assist Executive sous Chef in controlling food cost through storeroom requisition systems, product storage requirements, standardisation recipes and waste control procedures.
· Support Executive sous Chef in preparing operational reports and analyses setting forth progress, trends and make appropriate recommendations.
· Help Executive Sous Chef and Operations Team in managing payroll and controllable profit within established guidelines.
· Meet payroll budget expectations by being strategic with coverage, on-call shifts, etc. Support in scheduling appropriate staff levels in accordance with budget and business forecast.
· Be part of Interview, hire, evaluate, reward, and progressively coach kitchen personnel as appropriate.
· Train kitchen personnel in safe operating procedures of all equipment, utensils, and machinery, as well as food production principles and practices.
· Direct and coordinate the work of production and stewarding staff as necessary
· Maintain communications with relevant stakeholders
· Oversee food preparation and ensure high quality food service
· Manage kitchen operations, including scheduling staff, ordering supplies, and tracking inventory
· Assist with menu creation and development, including seasonal changes and customer demand
· Train new kitchen employees
· Ensure the kitchen is clean and safe
· Prepare food with precision, paying attention to consistency, colour, texture, and smell
· Be a team player with excellent communication and interpersonal skills
· Maintain a clean, safe and organized work environment.
· Uphold and demonstrate a complete understanding of company policies and procedures.
· Help implement systems and processes that help make tasks efficient and strengthen the financial performance of the unit.
What we need from you
- Degree or certificate in culinary arts preferred
- Japanese Cuisine background with an eye for detail in Sushi making
- A minimum of 2 years’ experience in a similar role and high volume outlet
- Food Handling Certified preferred
- Knowledge of HACCP
- Must speak local language(s)
- Ability to work varied hours/days, including nights, weekends and holidays, as needed.
