What's the job?

  • Menu Development: A Chef de Cuisine creates and updates menus with seasonal ingredients, innovative dishes, and guest’s preferences, ensuring they appeal to the target audience.
  • Kitchen Management: The Chef de Cuisine oversees daily kitchen operations, manages staff, schedules tasks, maintains food safety standards, and ensures efficient inventory and equipment management.
  • Quality Control: The Chef de Cuisine ensures food quality and consistency by upholding culinary standards, training staff, conducting evaluations, and taking corrective actions to maintain the restaurant's culinary excellence.

Your Day to Day

  • Effectively assist managing Vana Nava Sky by ensuring the following:
    • Oversee the implementation of standards as detailed in the departmental standards and procedures manual
    • Adhere to opening and closing procedures
    • Ensure brand standards are adhered to and maintained
    • Adhere to bill paying procedures 
    • Conduct effective shift briefings ensuring all staff are aware of VIPs, special occasions, daily specials with emphasis on upselling certain products; etc
    • Personally meet and farewell our guests
    • Encourage and motivate staff to provide optimum service during shifts
  • Share recommendations and guest comments to Chef and Vana Nava Sky Manager to reflect current customer profile
  • Accountable for cleaning routines and procedures in front and back of house
  • Coordinate with Marcom executive to answer all social media comments, questions etc.
  • Assist developing and implement Promotions Calendar for F&B products 
  • Manage special event and entertainment concepts
  • Create positive publicity opportunities
  • Assist with stock control
  • Guide and assist the service team during operation hours in Vana Nava Sky
  • Assign staff for special duties and work assignments (cleaning, printing etc.)
  • Manage wage and beverage cost 
  • Forecasting 
  • Stock control
  • Analyze food and beverage statistics through point of sale system
  • Manage customer database and utilize effectively
  • Actively pursue cost saving measures
  • Recycle wherever possible
  • Works with Superior on manpower planning and management needs
  • Works with Superior in the preparation and management of the Department’s budget

What we need from you

Completion of a degree or certificate in culinary arts and five years of experience as a chef, with at least one year in a supervisory capacity, or equivalent combination of education and culinary/kitchen operations experience. Must speak local language(s).
